The St. Regis Punta Mita Resort Appoints Jesús Duron As Signature Chef of Carolina Restaurant  



The St.Regis Punta Mita Resort, is pleased to announce the appointment of Jesús Duron as Signature chef of the property’s signature AAA Five Diamond rated restaurant, Carolina. In his new role, Duron will oversee all culinary initiatives, including the creation of the restaurant’s seasonally-inspired menu which uses only the freshest, locally sourced ingredients.


“We are thrilled to welcome the talented Jesús Duron to our beloved Carolina Restaurant,” said James Hughes, general manager of The St. Regis Punta Mita Resort. “Jesús comes to Punta Mita with years of impressive culinary experience from some the world’s most elite restaurants in Spain, France, and Mexico. We are confident that Jesús will carry the resort’s award-winning restaurant to new heights and will provide a distinctive taste of Mexico for our discerning guests that will keep them coming back for more.”


With ten years of experience in renowned restaurants, Duron’s most recent position was as Chef de Partie Garde Manger and Patîsserie position at Elmer Restaurant, a chic bistro in Paris, France. Beginning his career in Mexico City as kitchen assistant  at Les Moustaches, an elegant restaurant specializing in French cuisine, Duron has served as a chef at a number of celebrated restaurants, including La Marine in Noirmoutier, France; Azurmendi Restaurante in Vizcaya, Spain; El Celler de Can Roca in Girona, Spain; and multiple restaurants in Mexico City including, Pujol, Quintonil and Biko.


“My cooking style features simplistic dishes with high-quality local ingredients celebrating Mexican heritage,” said Executive Chef of Carolina, Jesús Duron. “I look forward to utilizing Punta Mita’s local ingredients, particularly seafood, to provide pleasurable dining experiences for our valued guests and visitors.”


Duron credits his passion for cooking to his grandparents, who taught him the importance of uniting as a family through cooking and meals. Fluent in French and Spanish, Duron will bring his international expertise and creative vision to his new role at Carolina Restaurant and craft delectable dishes specializing in fine local meats, seafood and fish.


With exceptional service, breathtaking ocean views, an inviting bar, a romantic outdoor terrace and a modern and comfortable design, Carolina Restaurant captures the resort’s uncompromised style and service. The menu features a variety of appetizers, entrees, desserts, a vibrant cocktail list, and an impressive wine list to delight discerning palates. Featuring signature dishes such as pozole verde ceviche, suckling pig, and tascalate, the restaurant’s name pays homage to Caroline Astor, a prominent 19th century American socialite.
